The light texture and
color combined with the rich flavor of this bread make it a favorite
with
kids and adults alike. Made with a kind of wheat called hard white
wheat, Sprouted Golden Whole Wheat is still 100% real whole grain;
no white flour.
(At Great Harvest, "real whole grain" means that the wheat goes
in the top of the grinding mill and the flour comes out the bottom.
Nothing is added, nothing is taken away, and nothing is separated
and then recombined. The whole kernel is crushed, period.)
Soaking and Sprouting:
Some of the wheat kernels are sprouted, dried, and then freshly
ground into flour. The rest of the whole grain flour in this
bread is soaked overnight in filtered
water with some whey added to make the soak acidic. The acidity allows enzymes
to break down phytic acid, making the minerals in the grain more available
for absorption. In addition, soaking and sprouting start breaking
down proteins in
the bread for easier digestion, and sprouting specifically increases some vitamins
(especially B vitamins).
Flavor Development:
The slight tangy flavor comes from lacto bacillus and similar
cultures in the whey (like yogurt) and the sprouting of the wheat
(also
known as malting) adds
a full rich flavor to this bread. These flavors will change slightly depending
on how temperatures in the bakery offset the sprouting and culture activity.
